Sourdough pizza base
Tomato concentrate
Ground Mozzarella cheese
Shiitake Mushrooms
Red Onion
Salt and pepper
Fresh basil

Sauté the shitake mushrooms in olive oil, balsamic vinegar, salt, pepper and garlic cloves to aromatize.

Brush the sourdough base with olive oil. Add a layer of tomato paste (if it's too thick, mix with 1 teaspoon of water).

Then evenly spread the ground mozzarella cheese, before placing the sautéed shitake mushrooms. Bake until cheese is melted. Add fresh basil leaves to serve.
